3 lbs slightly over ripe bananas
2 lbs sugar
1 pack of wine yeast
Water to 1 gallon
1 gallon jug
2 quart sauce pan
Rubber stopper or lid, with a hole
Slice bananas thin with skins on. Discard tops and bottoms.
Simmer bananas for 30 minutes.
Funnel sugar into 1 gallon jug.
Pour bananas through a strainer into the jug.
Top up with water to the shoulder of jug.
Allow to cool to room temp.
Shake for 3 minutes.
Store in a dark place
